As a kid, it was a special sort of treat to stumble upon blackberry bushes in the summer.
"You mean these are free? I can just eat them?" I'd ask the adults.
Clearly I did not grow up on a farm (my lucky husband did), so this was my first real introduction to the gift of food that comes straight from the soil. It makes me wonder how many children grow up thinking food comes from a cardboard box or plastic wrap.
Another fond memory from my childhood is the excitement of getting a popsicle from the ice cream truck on the hot summer afternoon. We'd run to catch the sing song-y truck in our wet bathing suits while our babysitter would yell after us to put some shoes so we don't burn our feet on the hot pavement. A cold sweet popsicle does wonders during a heat wave.
So, with the help of this popsicle mold and some adult beverages, I set about making some very special popsicles combining fresh blackberries from the wild bush next to our home and my favorite wine varietal - pinot noir.
Blackberry Pinot Noir Popsicles
- 2 cups fresh blackberries
- 1/4 c. red wine (I used Pinot Noir)
- 1/2 c. water
- 4 tbsp. simple syrup (you can learn how to make this here)
Puree blackberries in a blender. Add in wine, water, and simple syrup. Blend again to thoroughly mix. Pour mixture into popsicle molds (I used these). Place the molds in the freezer and freeze over night. That's it!
