I am loving summer so much!
My weekends have been full of BBQs, sun and water worshipping, and warm nights spent with good friends. As I'm edging into my late twenties, I'm realizing that you need to work a little harder for your summers as an adult. So I'm making a point of it this time, and what better way than by making some boozy popsicles!
Once you get your freezer mold, you can make just about any kind of popsicle (boozy or not).
The key to putting alcohol in ice pops is the ratio. Too much alcohol means the pop won't freeze (you'll just have a slushy).
Ingredients
1/2 cup watermelon juice (blended and strained)
1/2 cup strawberry puree
1/4 cup fresh mint
1/4 cup lime juice
2 tbsp honey
1/4 cup light rum
1/4 cup sparkling water
Pour watermelon juice, lime juice, honey and mint into a blender and blend until the mint becomes tiny flakes.
Add rum and club soda and stir to combine.
Pour into popsicle molds and freeze for at least 8 hours.
If you're like me, the waiting part is agonizing. But, trust me, if you take your pops out too early they will break and you will be sad.
