I learned a cool trick! I was checking out an awesome new site called The Old School that sends you daily DIY emails, and learned a way to repurpose the tops of beets to sprout greens.
It's as easy as cutting off the tops of your uncooked beets and placing them in a shallow dish of water near natural light. Watch how it grows 🙂

Pretty cool, huh? I'm probably going to juice these beet greens, but could easily saute them up with a little garlic and olive oil.
