Rainbow Fruit & Kale Smoothie

You’ve landed on a post I wrote a few years ago -
back when I was known as The Dabblist and was exploring all sorts of ways I could create beautiful things with my hands. It was a powerful time for me — awakening my creativity after suppressing it for so long — but this space has since evolved to reflect the woman I’m becoming.

Rainbow Fruit & Kale Smoothie

I need to be honest with you. This recipe really challenged the perfectionist side of me. I tried layering this glass 3 times before I finally realized it doesn't matter and embraced my creation by snapping a picture.

Because this smoothie is so fun to make and absolutely delicious. I can totally see it being a fun activity with children or at a girlfriend brunch. And, if you are like me, you will be tempted to channel your inner child and mix all the colors together into a brown colored mush. At least it’ll still taste great!

Rainbow Fruit & Kale Smoothie

  • ½ cup frozen blueberries + 2 tbsp plain greek yogurt + 2 tbsp coconut water {purple}
  • ½ cup frozen pineapple + 2 tbsp plain greek yogurt + 2 tbsp coconut water {yellow}
  • ½ cup frozen raspberries + 2 tbsp plain greek yogurt + 2 tbsp coconut water {pink}
  • ½ cup frozen mango + 2 tbsp plain greek yogurt + 2 tbsp coconut water {orange}
  • 1 cup packed kale leaves + 2 tbsp plain greek yogurt + 2 tbsp coconut water {green}

Using a blender, blend each fruit/yogurt/coconut water separately and place in a cup in the freezer while blending the next one.

Once all colors are blended and chilled for at least 10 mins, use a spoon to layer each color gently on top of the next one in a serving cup.

Drink immediately!
