Super Immunity Soup - Becca Piastrelli

You’ve landed on a post I wrote a few years ago -
back when I was known as The Dabblist and was exploring all sorts of ways I could create beautiful things with my hands. It was a powerful time for me — awakening my creativity after suppressing it for so long — but this space has since evolved to reflect the woman I’m becoming.

The seasons change, temperatures drop, rain falls, and we get the sniffles. A girl's gotta do what she can to combat the residual effects of autumn's coming.

This soup is filled with powerful ingredients that will give your immune system a little boost of goodness. By combining in a food processor (and not cooking down on a stovetop), the ingredients retain their nutrients. It's fresh and creamy and best eaten right after it's been made.

Ingredients

1 bunch kale

1 cup vegetable stock

1 small red onion

2 cloves garlic

1/2 avocado

1 tbsp. fresh yellow miso

3 tbsp. olive oil

1 lemon, juiced

sea salt and pepper, to taste

Combine all ingredients in a food processor and blend until smooth and bright green. You can eat either lightly warm (from the stovetop) or cold, like gazpacho. I garnished mine with a bit of thyme, but you could add sliced avocado (for a cold soup) or dandelion greens.
