Easy Refrigerator Pickling - Becca Piastrelli

You’ve landed on a post I wrote a few years ago -
back when I was known as The Dabblist and was exploring all sorts of ways I could create beautiful things with my hands. It was a powerful time for me — awakening my creativity after suppressing it for so long — but this space has since evolved to reflect the woman I’m becoming.

I've been wanting to pickle for a long time. I mean, what a concept. Place vegetable into a vinegar substance, and it transforms into something completely different. Just brilliant. I have to admit, that I only recently (I'm talking last 2 years here) had the realization that the common pickle was actually a cucumber. But we all gotta learn sometime.

So, after all this pickle excitement, I decided to try it out for myself with cucumbers and radishes.

Chop up your vegetables (or not!), and place them in a jar with black peppercorns and dill.

Combine 1 cup water, 1 cup white vinegar, 2 teaspoons salt and 1 tablespoon sugar. (You can alter the amount of sugar in your vinegar mixture to taste, this recipe makes the pickles a little sweeter.) Stir to dissolve. Pour into your  jar.

Seal and refrigerate - the longer, the more pickled your veggies get.

These particular jars were refrigerated for 5 days, and came out perfectly pickled and crunchy.
