Recipe: Avocado Lime Popsicles

Avocado Lime Popsicles

Summer's not over yet. Let's remember that over popsicles, shall we?

But instead of trying to recreate sugary stuff we used to get from the neighborhood ice cream truck, I’m into making some with real food ingredients.

This popsicle recipe is creamy and satisfying. The hard part is being patient enough for them to freeze! But it’s well worth the wait, especially if you make it on a Friday night for a weekend pool party or BBQ.

Avocado Lime Popsicles

Avocado Lime Popsicles

  • 2 avocados
  • Juice from 2 limes
  • 3/4 coconut milk
  • 1 cup simple syrup (there’s a fun recipe here)
  • Popsicle Mold

Avocado Lime Popsicles

In a food processor or blender, puree the 2 avocados and lime juice until smooth. In a bowl or large measuring cup, combine the avocado-lime puree, coconut oil, and simple syrup and whisk until well combined.

Pour the mixture evenly into the popsicle mold. Cover, add popsicle sticks, and place in the freezer overnight. Once frozen, you can dive in!
