These truffles are sneaky. They look sinful, right? Balls of luscious chocolate rolled in almonds. Yum.
So, here's the thing. They're raw. Deliciously raw, protein packed treats that make a great companion during the work day. The natural sweetness of the dates combined with the protein power of almond butter make for a total delight. I brought a bag of these to work last week, and were gone within 5 minutes. Who can say no to chocolate almond butter bite-sized truffles?
Ingredients
15-20 Medjool dates, seeded and halved
1/2 tsp vanilla extract
1/2 c. almond butter (of the creamy variety)
1/4 c. unsweetened shredded coconut
1/3 c. cocoa powder
1/2 tsp. sea salt
1 tbsp. cinnamon
1/4 c. toasted almonds, chopped
Start with your dates and vanilla extract in the food processor and process until well combined (like a thick paste). Then add in your almond butter with a few more pulses. Next add in all the rest - coconut, cocoa powder, salt, and cinnamon. Pulse until well combined. Roll the mixture into 1-2 tbsp balls in your palm. Roll each truffle in the almonds, and place in the fridge for at least an hour.

This looks amazing!! As I can’t stand dates I might try to substitue the dates with dryed apricots. What do you think? Can that work, too?
That would be an interesting experiment, Jasmin. Apricots have a much different flavor from dates (though that is the point for you, isn’t it?). If you need to sweeten it up a bit, I would add a bit of maple syrup or honey. Try it out (perhaps for a homework assignment?) and let me know how it goes!
These look delicious! I can’t get almond butter where I live, so will substitute for natural peanut butter. Am allergic to almonds anyhow, so will roll in crushed peanuts! Can’t wait to try this recipe! Emma from BYW xoxo
